Veggie Enchilada
Ingredients
Chop and mix together:
1 Cup corn (cut from the cobb)
1 Cup zucchini (grated)
2-3 fresh tomatos (finely chopped)
2 avocados
1/2 of a red onion (optional)
1 Tbs chili powder (Make your own: 1 Tbs tumeric, 1 Tbs cumin, 1 Tbs oregano)
Sauce
Blend 1/2 Cup sundried tomatoes (pre-soaked in water for 20 minutes), then add 1 Tbs extra virgin olive oil and 1 finely chopped fresh tomato
Directions
Now you're ready to make your Enchilada!
Rip off a few full cabbage leave from either a green or red cabbage.
Place veggie mix in the center of the cabbage leaf and layer some sauce on top, then wrap up your leaf or just eat it lakea taco!
Enjoy!!
If you want you can squeeze some lime juice to freshen it up even MORE!
